With a twist.

If you a Tik-Tokker then you’ve this dish circulating. Just in case you want to only use complex carbs in your recipe, here ya go. And it was really still quite tasty. Trust me.
Ingredients
- 16 oz cherry tomatoes
- 1 bunch asparagus, cut into 2 inch pieces half way down the stalk
- 8 oz block feta cheese
- 2 Tbsp olive oil
- 1/4 tsp salt and pepper
- Another 1/4 tsp pepper
- 16 oz small potatoes, halved or quartered into bite-sized pieces
- 1 tsp basil puree
- 2 tsp minced garlic
- 1 Tbsp olive oil
- 1/4 tsp salt and pepper
- Fresh chopped parsley for garnish
Directions
- Preheat oven to 400 degrees F with a middle rack and another rack below. Toss tomatoes and asparagus with 1 Tbsp oil and salt and pepper in a large oven-proof skillet. Place block of feta in the middle. Drizzle feta with 1 Tbsp oil and another 1/4 tsp pepper.
- On a sheet pan, toss potatoes, basil, garlic, oil, and salt and pepper.
- On the middle rack, cook the tomatoes and asparagus skillet. Cook the potatoes on the rack below. Cook each for a total of 30 minutes.
- Take both out of the oven. Add potatoes to the tomato skillet and, while breaking the cheese apart, mix all ingredients together.
- Garnish with freshly chopped parsley and serve hot.
