My own version. And no it doesn’t taste like PF Changs. No one can touch that. They turned out pretty good and I have to say I patted myself on the back and ate 3 servings of this stuff.
A friend of mine told me he was going to eat at Ichiban tonight so that inspired me to make this. My dad sends me all of these recipes and I periodically go through them and widdle out the ones I’m not interested in. That coupled with the fact that I haven’t blogged in a while led me to Chicken Lettuce Wraps. Plus, I’m really bored and am partaking in a Lord of the Rings marathon. Right now, we’re to the part where Aragon is trying to find another way for the women and children to go deeper into Helm’s Deep.
I did use the basis of this recipe from allrecipes.com but I didn’t have several of the ingredients so this one is mostly all me.
Chicken Lettuce Wraps
- 1 lb chicken breast, cubed small
- 1 large onion, diced
- 1 tablespoon olive oil (I used hot chile olive oil for more flavor)
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 cup lightly salted peanuts, roughly chopped
- 2 garlic cloves, minced
- 1 pinch ground ginger
- 1/4 teaspoon crushed red pepper
- 2 teaspoons sesame oil
- 1/2 tablespoon chives
In a large skillet, heat oil over medium high heat and cook chicken thoroughly. Once cooked, set aside in a bowl. Using the same pan, saute onions until tender; add soy sauce, rice vinegar, garlic, ginger and red pepper to onions and stir. Add cooked chicken, sesame oil, peanuts and chives and stir once more. Serve with lettuce wraps.

And btw, I heated the leftovers today and made burritos. I pan fried a couple of tortillas in some butter until slightly crispy (you still want to be able to wrap them without breaking). Oooooh, boy! I’m sure rice would be good with it as well.
