Well, not goodbye forever. I got to visit with my friend the entire weekend. Good friends are hard to come by.
Friday was my first time ever visiting Pigeon Forge and my friend, her mom and I went shopping at the outlets. It’s not often I get to shop with awesome people. I miss my mom. It was a great day. Exhausting but great. Saturday was spent sleeping in. I needed to refuel the tank after staying out past midnite for two nights in a row. I’m feeling the end of my 20’s.
We ate ribs, baked beans, garlic bread and this fantastic green salad. Can I give out some gold stars to the rib master? KUDOS! The ribs were great and I really don’t understand how you obtain a talent like that. The only time I’ve ever tried to cook meat in a “manly” way, I wound up have to rush my skillet outside to the balcony because Smokey the Bear was about to knock down my door. And not to mention, my smoke alarm was of course blaring so I had to keep going back and forth to the skillet and the smoke alarm to fan it back down to reality. I guess I’ll let the men take care of the meat.
Dessert was on me. Michelle Obama’s BHG issue was lent to me the other day and I opened the magazine and it fell to the greatest page ever. Cheesecake Stuffed Peaches. Excluding the butter, sugar, egg and vanilla (because you should already have these staples in your cabby), the peaches and cream cheese only cost me $9. Cheap dessert.
The peaches were fabulous and of course, I added my own little (very practical and logical) twist. Vanilla ice cream and sprinkled the whole thing with a little more cinnamon sugar.
Hope you enjoy these as much as I did!
