If I were an Italian, potato gnocchi would be my go-to comfort food. Gnocchi literally translates to “little lumps” and are basically mashed potatoes with attitude. They are made from potato and flour and are typically topped with a sauce after being cooked. Other types of gnocchi are made from semolina flour, milk and cheese. You can buy them in typical grocery stores and specialty stores. I bought mine from Walmart and they were sold vacuum sealed. You can also buy them frozen but I’d recommend searching for a little old Italian lady (think Sophia Petrillo) and paying her to make you some fresh. Cooking them is really simple. Just add them to a boiling pot of well salted water and cook for about 2 minutes or until they start floating to the top. Typical sauces include tomato, pesto and butter and topped with grated parmesan cheese. I went for the melted butter with minced garlic and parsley. Throw in some steamed broccoli and grilled chicken and you’ve got a meal!
